This is the recipe I get asked for over and over again. Whenever I go somewhere, this is the dish I am asked to bring. Went to my aunt and uncle's 40th wedding anniversary celebration today and brought 2 of them. Honest to goodness the first one was GONE before I even got the second one put down on the table. That one lasted all of about 5 minutes! It is such an easy receipe and very yummy, so I thought I'd share it with you. Warning though, you may want to bring recipe cards along with it, because you will get asked for the recipe! (And make at least 2!)
This recipe is originally a Pampered Chef. (Love that company. I have drawers and cupboards full of their stuff. I have tried cheaper alternatives before, but nothing is quite the same as you get what you pay for. Their stoneware is the best!) I have made the recipe so many times, that I don't use the original recipe anymore so here is my version: (like your grandma's recipes that didn't have measurements, just pinches and dashes. )
Precook one Pillsbury Pizza Crust Cool it completely. (I cook it on the Pampered Chef rectangle stone .)(The pizza dough is found in the refrigerator section at the grocery store.) (click on the pillsbury pizza link and try out the recipe for the Chicken Florentine Pannini - it won the $million dollar contest a few years ago. Another fairly easy recipe that always gets rave reviews. It is often the requested dinner for my girls' birthday dinners.)
Mix together cream cheese, fresh minced garlic cloves, and dill. Spread over pizza dough.
We like lots of cream cheese and spread it on fairly thick- adjust to your preference. Same goes for the garlic. Average is 2-3 cloves. We also like lots of the dill so often sprinkle it over once we have spread on the cream cheese.
At this stage I find it easiest to cut the pizza into squares here before the toppings go on.
Chop 1/2 of a red pepper, 1/3-1/2 of an english cucumber, 1/2 of a medium tomatoe and 1/2 of a red onion. Mix together in a bowl. (You can also add in olives and green pepper if you like.)
Spread over the cream cheese mixture
Top with feta cheese. You can crumble it on top or use a grater to grate it over top. We like lots of feta. Love the pampered chef cheese grater for this.
Watch it disappear fast!
Let me know if you try it and the reactions you get! :)
