If you are looking for a quick and very easy yummy dessert to serve next time you have guests, give this one a try. It is delicious. Made it for one of our neighbours today for his birthday as he just loves it. Good excuse to eat some! and lick the spoon as my little helper got caught doing. :)
Pistachio Cheese Cake (but it isn't a cheesecake per say)
1 1/2 cup flour, 2/3 cup margarine, 1/4 cup chopped nuts (optional), 8oz cream cheese, 2/3 cup icing sugar, large tub cool whip, 2 large packages pistachio pudding mix, 2 1/2 cups milk.
Layer 1: Blend together flour, margarine and nuts. Spread into a 9x13" pan. Bake at 350 for
15 minutes and cool thoroughly.
Layer 2: Cream together 8oz softened cream cheese and 2/3 cup icing sugar.
Fold in 1/2 of a large tub of cool whip. Spread over cooled layer 1.
Layer 3: In a bowl, mix together 2 1/2 cups of milk and 2 large pistachio instant pudding mixes. It
will thicken as you stir. Fold in remaining 1/2 tub of cool whip. Spread over layer 2.
Refrigerate to set. Can also be frozen.
