If you are looking for a quick and very easy yummy dessert to serve next time you have guests, give this one a try. It is delicious. Made it for one of our neighbours today for his birthday as he just loves it. Good excuse to eat some!

Pistachio Cheese Cake (but it isn't a cheesecake per say)
1 1/2 cup flour, 2/3 cup margarine, 1/4 cup chopped nuts (optional), 8oz cream cheese, 2/3 cup icing sugar, large tub cool whip, 2 large packages pistachio pudding mix, 2 1/2 cups milk.
Layer 1: Blend together flour, margarine and nuts. Spread into a 9x13" pan. Bake at 350 for
15 minutes and cool thoroughly.
Layer 2: Cream together 8oz softened cream cheese and 2/3 cup icing sugar.
Fold in 1/2 of a large tub of cool whip. Spread over cooled layer 1.
Layer 3: In a bowl, mix together 2 1/2 cups of milk and 2 large pistachio instant pudding mixes. It
will thicken as you stir. Fold in remaining 1/2 tub of cool whip. Spread over layer 2.
Refrigerate to set. Can also be frozen.
